Galway’s only plant-based breakfast menu is launched at The Lighthouse Café, which serves vegan and vegetarian food exclusively! Located in Abbeygate Street, the café is bringing an alternative to the traditional fry with their vegan inspired take on the classic fry as well as a range of fresh in-house bakes, overnight oats and granola to the table.
The Lighthouse Breakfast is offered from 10 am, Monday to Friday and will be served until 12 noon. “After launching the Sunday Vegan only brunch earlier this year, we saw that people really enjoy the variety and the flavours that are in our dishes. The brunch has become so busy that we thought why not do this too on the weekdays, but we will be keeping our Vegan Pancakes and Waffles for just Sunday Brunch, as we don’t want to spoil people too much!” laughed Kerry Legh, Co-Owner of The Lighthouse Café!
Expect delicious scrambled tofu served with rye toast, organic tomatoes and vegan white pudding which is a combination of rosemary, garlic, rice, smoked tofu and white beans. “We decided to do our own take on the traditional fry, the vegan white pudding texture and flavours is really filling and full of flavour without any saturated fats. So, a win win really,” explained Mark Legh Head Chef and Co-Owner of The Lighthouse Café.
The menu will also include overnight oats made with oat milk, seasonal fruit compote, date syrup and crushed nuts and Galway made Bowl a Granola served with prunes, yoghurt and seeds. There will also be a selection of in-house baked fruit scones, polenta cakes, vegan chocolate brownies or a traditional Carrot cake for those looking for something sweeter.
The Lighthouse Café is open from 10 am Monday to Friday and at 10:30 am on Saturday with a Vegan Brunch happening every Sunday from 12 noon until 4pm. The Lighthouse also does a monthly Vegan Dinner pop up night.
