Earlier this year the team at Micil Distillery paused production of their hand-crafted spirits for the first time since 1848. The action was taken as part of an effort to free up the distillery’s supply of alcohol and begin manufacturing antibacterial hand sanitiser to assist in the fight against Covid-19. Although spirit production at Micil Distillery remains halted, stocks of the traditional poitíns and award-winning Connemara gin are still available from the distillery.
So to keep us all in high ‘spirits’ during these strange times, the team at Micil Distillery have shared these delicious signature serve cocktail recipes for the perfect stay at home tipple!
Micil Manhattan
Ingredients
- 60 ml Micil Heritage Edition Poitín
- 10 ml Martini Rosso
- 3 dashes of Angostura Bitters
- Ice
Method
- Chill a martini glass.
- Fill a stirring glass with ice and then add the remaining ingredients.
- Using a bar spoon, stir the mixture until the liquid doubles in size.
- Empty the ice from your glass and strain in your martini mixture to serve.
Micil Irish Poitín
A smooth, spicy poitín made from 100% malted barley and Connemara bogbean, and the stand-alone leader in the Irish Poitín category. Produced in the Micil Distillery in Galway by a family of 6th generation Connemara poitín makers, proud of their 170 years of heritage and craft experience. A great sipping poitín with its trademark honey spice flavour and wonderfully smooth velvety texture. A ‘Micil Mule’ made with Micil Irish Poitín delivers a wonderful depth of sweetness, flavour and spiciness that no other mule can match.

Micil Espresso Martini
Ingredients
- 35ml Micil Irish Poitín
- 15ml Premium Coffee Liqueur
- 10ml simple sugar syrup
- shot of premium espresso
- Ice
- 2 – 3 coffee beans
Method
- Fill a shaker with ice cubes and add the rest of your ingredients.
- Shake and fine strain into a cocktail glass. Garnish with coffee beans.
