Today is International Burger Day and what better way to wrap up your Friday than with a tasty and delicious family favourite. For those of you looking for a lighter and healthier burger option, why not try this chickpea satay burger from Roz Purcell, aka Natural Born Feeder.
Ingredients: (Serves 4)
1 tin chickpeas rinsed and drained
2 tbsp. hot sauce (I go for medium heat)
3 tbsp. Peanut butter
50g oats (blended into a flour) or breadcrumbs
1/2 small courgette grated
Juice of 1 Lime
1 tbsp curry powder
Handful fresh Coriander
1 tbsp. maple syrup
Serve with:
Oiled up kale or greens of choice
Hellmans vegan garlic mayo mixed with 1 tbsp sriracha sauce
Cucumber
Carrot
Red cabbage
Method:
1. Preheat the oven to 200°C.
2. In a blender or food processor, blend all the burger ingredients together.
3. Take sections of the dough and roll into 4 burgers and bake for 20 minutes until crispy around the edges. Top with salad and mayo and enjoy!
