Winner of Galway’s Best Start-Up Business Award 2018, Teresa established and designed a cheese manufacturing facility on her family farm as part of a new start-up and farm diversification. She also manages all areas of the business from administration to milking cows.

As part of her market research for the LEO Galway Food Academy Development Programme, Teresa travelled to Switzerland and Austria to study cheese making and attended the UK School of Artisan Foods in Nottingham.

With a passion for food and a desire to know where food comes from, Teresa knew she was on the right career path.

“I wanted to develop a quality product from our high quality grass-fed cows milk and to add value to the raw material we were producing each day. Seeing milk being transformed into a food product is very exciting, it all starts and finishes on the farm, making it fully traceable and sustainable and reducing the carbon footprint. I have also developed local jobs and local community identity. I manage the production facility and ensure that it is well maintained. I also handle marketing and sales of my product to shops and buyers and in my spare time, I do the accounts and administration. It took determination, persistence, patience, good communication skills, time management, good documentation and motivation, but it was definitely worth it!”
