What does a world-famous celebrity chef cook for Christmas dinner? Surely, it’s some wild and wonderful exotic dish that she picked up on her travels? Not Rachel Allen because Rachel Allen is a traditionalist.
“I’m a turkey, sprouts and spuds for Christmas dinner kind of person,” she said ahead of her cookery demonstration at the Lough Rea Hotel and Spa taking place on Thursday, November 29th. Rachel will be making Brown Soda scones, Smoked Salmon Pate, Celeriac Soup with Roasted Hazelnut and Avocado Salsa, Roast Root Vegetables, Glazed Brussels Sprouts, Pan-Fried Duck Breasts with Redcurrant Jelly Sauce, Mincemeat Crumble Cake and Chocolate Christmas Tree. Our mouths are watering already!
Those attending the cookery demonstration can expect plenty of tips for a festive 3-course meal with the main focus being on stress-free cooking. “Preparing in advance is the key to a successful, stress-free Christmas dinner,” Rachel said, “and a lot of what we will be doing in Loughrea will be making sure that Christmas dinner won’t be a burden. There’s a lot that can be done in advance and it’s all about getting the timing right.”
